I don’t know about you but I have been camping now in 6 person tents for many years and have certainly had my fair share of beans and sausages, although I still have them on occasions but now I have mastered the Dutch oven. To avoid the same old meal night after night where the kids roll their eyes and say “not again” is easy when it comes down to preparation and timing.
Without doing this you will be disappointed with your results and as you are hungry will quickly fall back on the old favorites beans and sausages again!
Prepare your pit with hot coals you will need to:
- Ensure that you have enough coals for the top and the bottom of the Dutch oven – you will need more coals if it is windy or very cold
- If you are doing a pot roast or casserole you will need another fry pan to brown meat
- With this type of cooking you can use cheaper cuts of meat and they will be as tender as the more expensive cuts
Brown the meat quickly on both sides using your fry pan and then transfer to your Dutch oven, add your spices and quartered onions. Place the lid on the oven and place on the hot coals remembering to place hot coals to cover the top. Depending on the weather check the meat at around 30 – 40 minute mark and then add quartered potatoes that are unpeeled and add a little more water if necessary (not too much) cook for a further 20-25 minutes until potatoes are tender.
